You can usually fit 3 or 4 small canning jars in most large stock pots. By small, I mean pint-sized or smaller. Quart jars will likely be too big for most big stockpots. Though, of course, if you have a big family like we do , you might have some massive soup kettles hanging around your home!

After that, proceed just like you would for any other canning recipe. Fill the pot the rest of the way with water, at least one inch above the lids on the jars. Have looked and looked but have not seen this anywhere. If you use the wide mouth, your regular jars might slip through. If you have a round rack both my pressure cookers can with them , you can pop one into the bottom of your stock pot and consider your canning pot ready to go. If you don't have a round rack that fits your stock pot, you can build one with aluminum foil.

When pressure canning , it is perfectly ok for the jars to touch. When water bath canning , there should be room all around the jars so the water is able to circulate freely.

That's why the water bath canner comes with a rack to hold the jars apart. One of the misconceptions about canning is the belief that you must have a dedicated canning pot in order to can. This is not true. All you need is a pot that is tall enough to hold a rack, your jars, an inch of water above the jars and an additional inch or so of space where the water can boil. Once all the jars have lids and rings, lower them into your canning pot.

Make sure the jars are fully submerged and are covered with about an inch of water you need that much to ensure that they won't become exposed during boiling. You don't want the water to be rolling when you reach in with your jar lifter. The jars must not sit directly on the bottom of the canner or touch each other.

Water needs to flow freely around each jar. Add hot water if needed until the jars are covered by 2 inches of water. You can also process jars in any pot deep enough to have jars fully covered in boiling water. Most are designed to hold seven quart jars or eight to nine pints. Small pressure canners hold four quart jars; some large pressure canners hold 18 pint jars in two layers, but hold only seven quart jars.

Water bath canners Essentially, a water bath canner is a very, very large pot, with dimensions to hold at least 7 quart jars and allow them to be submerged by 1 to 2 inches of water. The canners usually include a rack with handles to make it easier and safer to put the jars in and take them out of the boiling water. If you have a pot that is deep enough to cover over the tops of the jars with water by inches and have room for boiling, you can use it.

You need a rack or a folded towel in the bottom. If you don't have a lid for it, use a baking sheet or pizza pan. If you 're planning on canning , you can reuse your purpose-made glass jars and screw bands, as long as they 're in good condition.

The metal snap lids, on the other hand, are made to be used once. Once the gummy, rubbery seal on the lid is heated and cooled, it can 't make the same quality of seal again.

The solution is easy, though: Next time I process quart jars I'll take out the raised rack and set a smaller one, probably borrowed from my pressure canner , in the bottom of the tamale steamer.
